At the core of our venues is a clear, intentional process that guides every decision we make. This framework ensures that our choices honour the people and relationships that allow hospitality to thrive. Everything we do follows five key pillars, in this order:

This structure, inspired and adapted from restaurateur Danny Meyers (Eleven Madison Park, New York), keeps us anchored in purpose. It reminds us that great hospitality begins with looking after ourselves, extends into supporting each other, and ultimately shapes how we serve our wider community.

  • Tip the Farmer, directly supporting primary producers.

  • Featuring Indigenous ingredients like kangaroo, lemon myrtle, davidson plum or bush beef to honour First Nations food culture.

  • Bringing local suppliers into the spotlight and championing their craft.

Evidence-Based Sustainability

Sustainability is central to who we are, but we approach it with a focus on what actually makes a measurable difference. Beyond the visible actions guests often associate with sustainability, we prioritise operational choices that have strong evidence behind them.
This includes:

  • Maintaining kitchen equipment, like regularly cleaning fridge filters, to dramatically reduce energy use.

  • Composting all appropriate waste.

  • Minimising plastics wherever possible.

  • Partnering with sustainability focused brands such as Huskee.

Our commitment is not just to look sustainable, but to be sustainable in ways that matter.

Inclusivity at Our Core

Inclusivity isn’t an optional extra, it is a core value. Food should be accessible, enjoyable, and safe for everyone. That’s why our menus are built with a wide range of dietary needs in mind, offering gluten-free, dairy-free, vegan, and vegetarian options without compromise on flavour or creativity.

We want every person who comes through our doors to feel considered, welcome, and respected.
